Turkey Meatballs​

Ingredients
1 pound lean ground turkey
1 large egg
1/4 cup almond flour
1 tablespoon tapioca flour
1/2 onion, diced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried parsley
1 jar of your favorite marinara sauce
Zoodles, rice, or noodles for serving

Instructions

Add all ingredients for the meatballs (everything except the marinara sauce and noodles/rice) to a large bowl and use your hands to mix thoroughly.
Heat marinara sauce in a large pan with sides. When bubbling, use an ice cream scoop to form meatballs with the turkey mixture and drop like dumplings into the bubbling sauce. Should make about 12-15 meatballs. Cover and let simmer, stirring occasionally to ensure that all sides of the meatballs cook, for about 20 minutes or until turkey is cooked through.

Meanwhile, prepare rice or noodles of choice.
