Sorghum Waffles
Ingredients:
1 cup sorghum flour
1/2 cup tapioca flour
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon xanthan gum
1/3+ cups almond milk mixed with 1 teaspoon vinegar
2 eggs
3 tablespoons coconut oil
1-2 tablespoons molasses/coconut sugar
1 teaspoon vanilla
Instructions:
Mix dry ingredients and wet ingredients in separate bowls. Gradually add wet ingredients to dry ingredients, mixing just until combined. If needed, add a bit of extra water or almond milk to achieve desired consistency. Cook in preheated waffle iron. Makes 4-6 waffles.
