Glazed Salmon with Sautéed Cabbage
Ingredients
Salmon:
1 pound skinless salmon filets
sesame oil
Bragg's liquid aminos
minced garlic or garlic powder
minced ginger or ginger powder
salt and pepper
Cabbage:
1/2 green cabbage, shredded
1/2 red onion, sliced thinly
1 or 2 carrots, shredded
sesame oil
Bragg's liquid aminos
apple cider vinegar or rice vinegar
mirin or white wine and coconut sugar
salt and pepper
Directions
Preheat oven to 400 degrees. Place salmon filets on parchment paper in a baking tray. Pour oil and aminos over fish, then sprinkle on garlic, ginger, salt and pepper. (I didn't measure!) Let marinate at room temperature while oven heats. Bake 15-18 minutes depending on the size of your filets, or until fish flakes. I broiled mine for the last few minutes to brown the top.
Heat a skillet over medium heat and add sesame oil. Add vegetables, then remaining ingredients. Cook, stirring every few minutes, until liquid evaporates and vegetables begin to brown on the bottom. The browning brings out the flavor!
Serve fish and cabbage mixture with rice or potatoes or other carbohydrate.
