Double Chocolate Cookies

Ingredients

1 cup coconut sugar
.5 cup Nutiva organic shortening
1 teaspoon vanilla
1 cup oat flour
.25 teaspoons cinnamon
10 tablespoons raw cacao powder
1 teaspoon baking soda
.25 teaspoons baking powder
.5 teaspoon salt
2 tablespoons full fat coconut milk from a can
~1 cup chocolate chips

Directions
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
​
In a stand mixer, cream together coconut sugar, shortening, and vanilla. Add all remaining ingredients except chocolate chips and combine. Mix chocolate chips in with your hands.

Scoop out 1 tablespoon of batter and roll into a ball and place on baking sheet. Continue until all batter is used.
​
Bake for ~12 minutes, then let cool for 30 minutes. They store well in the freezer!
